A joyous festive season to all!

Merry Christmas and a joyous and safe holiday season to all!

December provides a great opportunity to reflect on the year that was and for us, it’s been a great one in many ways.  Some of the highlights were the opening of number of new restaurants in NSW and Victoria, the introduction of home delivery services into many of our restaurants and the further deepening of our long-standing commitment to Moira Kelly’s work with a major fundraising campaign.

In such a busy year, there are always opportunities to learn and sometimes the lessons seem like simple facts of life that can be easily forgotten. As CEO, I direct the company through its growth and development and I need to take a lot of people with me. I’ve learned that our decisions need to be as fully informed as possible and that it’s vital to take the minority voice into account, but to also not let that voice stall necessary change.  Most important, I’ve seen time and time again that the secret to success is to plan, stay focussed on what needs to be achieved and always remember your people.

One of the highlights of Christmas is spending quality time with our family and friends and preparing delicious food that we can all share.  At this time of year, I often find myself thinking of my childhood Christmas celebrations and the many simple and incredibly tasty dishes that my mother prepared.  One of those was the very easy to cook and delicious Pepe e Patate Fritte (Fried Capsicums and Potatoes) and to finish up the year, I’d like to share the recipe with you. Enjoy!

Pepe e Patate Fritte (Fried Capsicums and potatoes) serves 2

Ingredients 

Capsicums
2 potatoes
2 x ripe tomatoes
Handful of basil
Olive oil
Salt to season

Method

Cut ripe tomatoes in small cubes and put aside in plate
Cut Capsicum and in strips (remove head)
Cut potatoes in thin strips
Put olive oil in frying pan

First shallow fry potatoes until brown
Take out and put aside on a plate
Add capsicum and fry in the same oil as potatoes
Fry until soft and browned
Take out and put aside
Add the tomatoes in the pan and salt
Cook until nice and soft

Add basil, capsicums and potatoes

Combine well and add salt as desired.

Serve with crusty Italian bread or a meat dish
